Roasted chicken with vegetables

Roasted chicken is a classic family recipe: quick and easy to prepare, and not expensive!! It is very healthy especially if you swap the white potatoes by the sweet potatoes. Sweet potatoes have more vitamin C, more fiber, fewer calories and also fewer carbs than white potatoes!

Ingredients
(For 8 people)
2.5 kg of chicken
8 carrots, roughly chopped
2 medium sweet potatoes, roughly chopped
2 medium zucchinis, roughly choppped
1 large brown onion, thickly sliced
Lemon halved
8 garlic cloves, unpeeled
3 tbsps. of olive oil
3 tbsps. of rosemary
100ml of water
Himalaya salt
Method
Preheat the oven to 200 degrees
Rinse the chicken inside and out
Remove any excess fat and pat the chicken outside dry
Place the chicken in a large oven proofed dish or roasted tray.
Stuff the chicken cavity with half of the lemon and the garlic cloves.
Brush the chicken with olive oil and add the rosemary and the salt.
Place the carrots, sweet potatoes, zucchinis and onion in the roasting tray
Bake it uncovered in the oven for 1.5 hours, turning the chicken every 30 minutes.
After 30 minutes, check the vegetables and add the water to prevent them to burn
