“Stuffed peppers” are a recipe from my childhood, very similar to my stuffed eggplants recipe, but this recipe is with brown rice. They are so tasty, filling and...healthy! They contain beef and rice so you don't need to add anything else!
(for 4-6 people)
500g ground beef
120g uncooked brown rice
1 can tomato sauce (400ml)
1 large brown onion
3 garlic cloves
2 tbps of olive oil
Preheat oven to 180 degrees C.
Cook your rice for 20 minutes in boiled water. Once cooked, drain and reserve it in a bowl.
In a pan over medium heat, stir fry the onion and garlic in one tsp. of olive oil.
After 3 minutes add the ground beef and cook it until browned
Add the tomato sauce to the beef mixture.
Wash and remove the tops and seeds of the peppers
Cut the peppers in two
Grease your baking dish with a bit of olive oil, arrange the peppers and brush them with olive oil.
Bake them in the oven for 15 minutes, checking them every 5 minutes to ensure they don’t burn!
In a bowl, mix the beef mixture with the cooked rice.
Spoon the mixture into each pepper and brush the peppers with olive oil.
Bake 1 hour in the preheated oven, checking every 15 minutes.
