Gluten Free Coconut and almond biscuits recipe

If you are looking for a very simple and basic recipe for gluten free biscuits, you can try my recipe.
I used to make traditional French cookies where sugar, flour and eggs where the main ingredients.
I was looking for a healthier version and just swapped some of the ingredients :
I replaced the refined white sugar by raw honey, but you can use maple or agave syrup if you want.
I have also replaced the white flour by almond meal and coconut flour.
And finally, I used coconut oil instead of butter.
These cookies should still be considered as a treat, but they are perfect for kids birthday parties for Gluten Free intolerances or just for weekend snacks to have with a cup of tea.
