I use this basic recipe for my kids, so I have kept it very simple. They love basil and mint so I have added them, but you can easily swap them to use spinach, rosemary...
They are also perfect for lunch boxes. Just need to keep them cool.
Ingredients (will make around 15-18 balls depending on size)
60g of quinoa
500g minced beef
1 tablespoon fresh basil, chopped
1 tablespoon fresh mint, chopped
Olive oil or coconut oil for the frying pan
Place the quinoa in a saucepan with water. Bring to the boil, then reduce heat to medium, cover and simmer for 12 minutes. Remove from the heat. Drain the quinoa and reserve in a bowl to let it cool down.
In a large mixing bowl, whisk the eggs and then add the beef, the quinoa, the mint and basil. Mix really well to combine all ingredients together. For my kids I don’t add any salt to their meals, but if you wish you can season with salt and pepper to taste. You can also add a bit of sweet paprika.
Roll the mixture with your hands to form balls.
Heat olive oil (or coconut oil) in a large non-stick frying pan over medium heat.
Cook the quinoa balls for 3 minutes on each side or until golden all over.
