This is my healthy version of the Chicken Caesar Salad. I didn't use croutons and the common dressing which is usually very oily. I have only put a bit of olive oil.
My version is very simple: Just iceberg lettuce, tomatoes, ossau-iraty (instead of parmesan), and grilled chicken. Just remember that making your own Chicken Caesar Salad at home can be very healthy but Chicken Caesar Salads you can find in most of the restaurants contain lots of dressing and croutons! Just ask the waitress to have the dressing on the side or no dressing at all and remove the croutons that are usually with butter or oil!
(for 4 people)
1 iceberg lettuce
120g of parmesan cheese or ossau-iraty (30g per person)
3 chicken breast (120-150g per person)
2 tbsp to cook the chicken
3 tbps of olive oil to serve (1 per person)
Grate the Parmesan or ossau-iraty cheese into a large bowl. Reserve
Rinse and drain the iceberg lettuce. Divide the lettuce in 4 plates.
Rinse the tomatoes, cut them 8 and add them to the salad
Cut the chicken in long strips and then cook it in a frying pan on medium heat, with olive oil for 4-5 minutes on each side or until golden.
Add the chicken on top of the salad
Add slices of parmesan
And your salad is ready!! You can add a bit of olive oil depending on your taste. Avoid any store brought dressings to ensure your chicken Caesar stays healthy!
Notes: Usually, it looks better to serve the chicken in long strips, but as my kids eat the salad with us, I cut them in small pieces so that it is easier for them to eat!
