I have been given kumquats so I was looking for a nice and healthy recipe!
I have read their benefits and according to the USDA, eight raw kumquats have 66.7 mg of vitamin C which is almost the same value as the recommended amount of vitamin C for women (75mg). They are also very high in fiber! Eight raw kumquats provide 9.9 g of dietary fiber. The amount of fiber recommended daily is 25 g for women.
I really wanted to keep the whole fruit so I used them as they are in the smoothies!
This recipe will make one large smoothie glass and a small one.
50g of spinach leaves
200 ml of coconut water
1 Granny smith apple
Peel the apple and kiwi and cut them in big chunks
Place the apple, kiwi, spinach leaves, kumquats and coconut water in the blender
Blend on high for 30-60 seconds or until desired consistency is reached.
Serve in glasses
Notes: This smoothie is quite thick. If you prefer a thinner consistency for your smoothie, you can use more coconut water.
