Do you know that mussels are low in fat and saturated fats, and are a good source of protein and iron? Mussel meat contains the same amount of protein as red meat but less fat. I love mussels as they are so easy to make!! You can cook them the french way, what we call "moules marinières".
(for 3 people)
1kg of mussels (cleaned and debearded)
1 large brown onion
3 garlic cloves
25 cl of white wine
2 tbps of olive oil
Fresh parsley (optional)
Brown rice to serve
(1/2 cup or 75-120g of cooked rice per person)
Cook your rice for 20 minutes in boiled water. Once cooked, drain and reserve it in a bowl.
In a pan over medium heat, stir fry the onion with two tsps of olive oil, stirring occasionally, for 4 minutes or until onion is tender.
Add the garlic and cook for another minute.
Stir in the white wine and bring to a boil
Reduce the heat
Add the mussels, covered with a lid and cook them for 10 minutes or until mussels open
Serve the mussels with brown rice and fresh parsley on top (optional)
