This is a recipe of carrot falafels, especially made for my son lunchboxes.
They are gluten free and nut free as well :)
The chickpeas will give him plenty of protein and fiber for his day. And this will make a perfect entrée for our dinner tonight! I will serve the falafels with a cumin yoghurt.
Mushrooms, almond and cashew patties are very easy to make. These patties are made with mushrooms but you can use zucchini, carrots and anything else!!

Roasted eggplants are very easy to make! It makes a great healthy side dish to fish or chicken.
Eggplants absorb a large number of fat, therefore I prefer baking then than frying them, as it is easier to reduce the oil amount you use when you cook them in the oven.
