I have made some changes to the original version : Almond meal instead of wheat flour, coconut sugar instead of white sugar, macadamia oil instead of butter and I have reduced the quantity of sugar by adding some cinnamon. I have also only put sufficient oil to make a crumbly texture. The results are really good!
For the apple layer:
4 large apples
1 tbsp. of coconut sugar
20g of coconut sugar
90g of almond meal
50g of almond
4 tbsp. of macadamia oil
Preheat your oven to 170°.
Then start by making the apple layer: peel, core and slice the apples in small pieces. Place the apples in a large rectangular dish at least 5 cm deep. Toss the apples with 1 tbsp. sugar. Cook them in the oven for 20 minutes, turning the apples after 10 minutes.
In the meantime, prepare the crumble: in a large bowl mix the almond meal, almond, sugar and macadamia oil. Rub the crumble with your fingertips until the mixture looks like breadcrumbs.
Remove the pan from the oven and pour the crumble to cover all the apples. Gently press the texture with the back of a fork.
Put it back in the oven for 20-25 minutes or until golden.
Leave it to cool and serve warm with yoghurt (optional).
