Stewed apples with yoghurt, seeds and nuts make a perfect breakfast when the days are cold.
This recipe is for one person.
1 large apple
1 tsp cinnamon (optional)
1 tbsp of pumpkin seeds
1 tbsp of cashew
1 tbsp of crushed peanuts
150g plain yoghurt
The recipe is very easy:
Slice the apple and place it in a medium pan with a bit of water and cinnamon (optional) over a medium heat for 8 minutes or until the apple is tender.
Serve in a bowl with your preferred yoghurt, sliced figs, cashew, pumpkin seeds and crushed peanuts.

For this recipe you only need one apple but I usually do a batch of stewed apples that I can reuse during the week as they can be kept for a week in the fridge. Then when you want to have your stewed apples for breakfast simply warm them in the microwave or in a pan and add your preferred topping. If you think you would not use the stewed apples quickly, then freeze them for future use and defrost them when required.
You can any nuts or seeds to serve it. Just keep your portions controlled with the same number of tablespoons as listed in the recipe.
If you are allergic to peanuts you can replace it with coconut flakes for instance.
